Ingredients
  

Main Ingredients:

  • 1 cup chickpea flour besan
  • ½ cup all-purpose flour
  • 1 small onion finely chopped
  • 1 small tomato finely chopped
  • 1 green chili finely chopped
  • ½ cup fresh coriander chopped
  • 1 tsp cumin powder
  • ½ tsp turmeric powder
  • 1 tsp coriander powder
  • ½ tsp baking powder
  • 1 tsp salt adjust to taste
  • ½ cup water or as needed
  • Oil for deep frying

Optional Additions:

  • ½ tsp chili powder for extra spice
  • 1 garlic clove minced

Instructions
 

Step 1: Prepare the Batter

  • In a large mixing bowl, combine chickpea flour, all-purpose flour, baking powder, salt, cumin, turmeric, and coriander powder.
  • Add the chopped onion, tomato, green chili, and coriander leaves.
  • Gradually add water while mixing to form a thick batter. The consistency should be similar to pancake batter.

Step 2: Heat the Oil

  • In a deep frying pan, heat oil over medium heat until it reaches 350°F (175°C).

Step 3: Fry the Kebabs

  • Using a spoon or your hands, drop small portions of batter into the hot oil.
  • Fry until golden brown, turning occasionally for even cooking (about 3-4 minutes per batch).
  • Remove and place on paper towels to absorb excess oil.

Step 4: Serve and Enjoy

  • Serve hot with tamarind chutney, yogurt sauce, or a squeeze of lemon.
