Ingredients
  

For the Chocolate Sponge:

  • 1 ¾ cups flour
  • ¾ cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 ½ cups sugar
  • 4 large eggs
  • 1 cup milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract

For the Filling and Topping:

  • 2 cups heavy whipping cream
  • ½ cup powdered sugar
  • 2 cups cherries fresh or canned
  • ½ cup cherry syrup optional
  • Chocolate shavings for decoration

Step 1: Make the Chocolate Sponge

  • Start by preheating your oven to 350°F (175°C) and greasing two 9-inch round cake pans.
  • In a mixing bowl, combine the flour, cocoa powder, and baking powder by sifting them together.
  • In a separate bowl, whisk sugar, eggs, milk, oil, and vanilla extract until smooth.
  • Gradually add the dry ingredients to the wet mixture and stir until just combined.
  • Distribute the batter evenly between the prepared pans and bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cakes cool completely.

Step 2: Prepare the Filling and Topping

  • whip the heavy cream with powdered sugar until it reaches stiff peaks.
  • If using fresh cherries, pit and halve them.

Step 3: Assemble the Cake

  • Place one cake layer on a serving plate and brush it lightly with cherry syrup (optional).
  • Spread an even layer of whipped cream, then add a generous layer of cherries.
  • Place the second cake layer on top, repeating the whipped cream and cherry layers.
  • Cover the entire cake with whipped cream and decorate with chocolate shavings and additional cherries.
