Ingredients
  

  • 4 medium Potatoes peeled and diced into 1-inch cubes
  • 1 medium Onion diced
  • 2 cloves Garlic minced
  • 2 tablespoons Butter melted
  • 4 cups Chicken or vegetable broth to cover the potatoes
  • 1 cup Heavy cream or milk for creaminess
  • 1 teaspoon Salt or to taste
  • 1/2 teaspoon Black pepper freshly ground or to taste
  • 1/2 teaspoon Thyme or rosemary optional for added flavor
  • As needed Shredded cheese crispy bacon, or green onions for garnish

Instructions
 

Prep the Potatoes

  • Peel and cut the potatoes into 1-inch cubes to ensure even cooking.

Sauté Aromatics

  • Heat 2 tablespoons of butter in a large pot over medium heat.
  • Add diced onions and cook until soft and translucent, about 5 minutes.
  • Stir in minced garlic and cook for another minute until fragrant.

Cook the Potatoes

  • Add the cubed potatoes to the pot and pour in enough chicken or vegetable broth to fully cover them.
  • Bring the mixture to a boil, then reduce the heat to low.
  • Cover and simmer for 15-20 minutes, or until the potatoes are tender when pierced with a fork.

Mash or Blend

  • Use a potato masher or immersion blender to mash part of the potatoes directly in the pot. Leave some chunks for texture.

Add Creaminess

  • Stir in 1 cup of heavy cream or milk.
  • Season with salt, black pepper, and optional herbs or spices. Taste and adjust seasoning as needed.

Simmer and Final Touches

  • Let the soup simmer for another 5-10 minutes to allow flavors to meld and the soup to thicken slightly.

Serve and Garnish

  • Ladle the soup into bowls.
  • Garnish with shredded cheese, crispy bacon, or chopped green onions, if desired.
