Instructions
Prep the Potatoes
Peel and cut the potatoes into 1-inch cubes to ensure even cooking.
Sauté Aromatics
Heat 2 tablespoons of butter in a large pot over medium heat.
Add diced onions and cook until soft and translucent, about 5 minutes.
Stir in minced garlic and cook for another minute until fragrant.
Cook the Potatoes
Add the cubed potatoes to the pot and pour in enough chicken or vegetable broth to fully cover them.
Bring the mixture to a boil, then reduce the heat to low.
Cover and simmer for 15-20 minutes, or until the potatoes are tender when pierced with a fork.
Mash or Blend
Use a potato masher or immersion blender to mash part of the potatoes directly in the pot. Leave some chunks for texture.
Add Creaminess
Stir in 1 cup of heavy cream or milk.
Season with salt, black pepper, and optional herbs or spices. Taste and adjust seasoning as needed.
Simmer and Final Touches
Let the soup simmer for another 5-10 minutes to allow flavors to meld and the soup to thicken slightly.
Serve and Garnish
Ladle the soup into bowls.
Garnish with shredded cheese, crispy bacon, or chopped green onions, if desired.
