Instructions

Preparing the Meatloaf Mixture

  • Start by preheating your oven to 350°F. This temperature ensures an even bake.
  • Combine the ground beef and lamb in a large mixing bowl. Mix them with your hands for even distribution.
  • Next, add the following ingredients to the bowl:
  • 1. Crushed Ritz crackers
  • 2. Finely chopped onions
  • 3. Chopped green bell peppers
  • 4. Shredded cheddar cheese
  • Gently mix these until just combined. Overmixing can lead to a dense loaf.
  • Beat the eggs separately, then pour them into the meat mixture along with Worcestershire sauce and milk. These components will add moisture and richness.
  • Finish the mixture by adding ketchup and blending until everything sticks together nicely.

Shaping and Baking the Meatloaf

  • Transfer the meatloaf mixture into a loaf pan or shape it by hand on a lined baking sheet.
  • Press gently to remove air pockets but avoid packing it too tightly. A lightly packed loaf allows for even cooking.
  • Place the shaped meatloaf in the preheated oven. Bake for about 60 minutes. This time ensures the meatloaf cooks through while retaining its juiciness.

Making the Signature Glaze

  • While the meatloaf bakes, prepare the glaze. This sweet and tangy topping makes all the difference.
  • In a small bowl, mix together:
  • - Ketchup
  • - Brown sugar
  • - Yellow mustard
  • Stir these ingredients until smooth. Adjust the sweetness and tanginess to your liking.

Glazing and Finishing the Meatloaf

  • About 15 minutes before the meatloaf has finished baking, remove it from the oven.
  • Brush the prepared glaze over the top, ensuring an even coat. This will help create a beautifully caramelized layer.
  • Return the meatloaf to the oven. Let it bake for the final 15 minutes. Once done, let it rest for a few minutes before slicing. This rest time helps retain the juices, ensuring each bite is moist and flavorful.
