  • 1 handful of cherry tomatoes halved
  • 1 lime juiced
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro chopped (optional)

Prepare the Quinoa

Prepare the Vegetables

  • While the quinoa is cooking, chop the red bell pepper, slice the avocado, and halve the cherry tomatoes.
