Instructions
Season the Chicken
Pat the chicken breasts dry, then season it with salt, pepper, and paprika.
Sear the Chicken
Heat 2 tablespoons of olive oil in a large frying pan over medium-high heat.
Place the chicken breasts in the skillet and cook for 5 to 6 minutes on each side until they turn golden and are nearly cooked through. Set the chicken aside on a plate.
Prepare the Honey Mustard Sauce
In the same skillet, sauté the garlic for 1-2 minutes until it's fragrant, but be careful not to let it burn.
Lower the heat to medium, then stir in the Dijon mustard, whole-grain mustard (if using), honey, and apple cider vinegar. Sauté for 2-3 minutes until the sauce becomes smooth and starts to bubble.
Cook the Chicken in the Sauce
Return the chicken to the skillet, spoon the honey mustard sauce over the top, and let it simmer for another 5-7 minutes until the chicken is cooked through (internal temperature should be 165°F or 75°C). The sauce will thicken slightly.
Serve
After the chicken is fully cooked, take the skillet off the heat. Garnish with fresh thyme if desired and serve immediately.
