  • 2 slices sourdough bread
  • 1 roasted bell pepper
  • 4 slices grilled zucchini
  • 2 slices provolone cheese
  • 1 tablespoon hummus
  • Handful of spinach

Instructions
 

  • Spread hummus on one slice of bread.
  • Start by layering roasted bell peppers, grilled zucchini, provolone cheese, and fresh spinach.
  • Place the second slice on top and grill in a panini press for 4 minutes.
  • Slice diagonally and serve hot.
