Pina Colada Mocktail

Ingredients
  

  • 1 cup Fresh Pineapple Chunks or 3/4 cup canned pineapple in juice, drained
  • 1/2 cup Coconut Milk full-fat canned, or substitute with 1/3 cup natural coconut water for lighter version
  • 1/4 cup Fresh Pineapple Juice or high-quality store-bought without added sugar
  • 2 tablespoons Pure Maple Syrup or honey, adjust to taste
  • 1 tablespoon Fresh Lime Juice about 1/2 large lime
  • 1 cup Ice Cubes plus extra for serving
  • 1 teaspoon Chia Seeds optional, for nutrition boost
  • 2 slices Fresh Pineapple for garnish
  • 2 pieces Toasted Coconut Flakes for rim garnish, optional

Instructions
 

  • Add pineapple chunks, coconut milk, pineapple juice, maple syrup, and lime juice to your high-speed blender. If using chia seeds, add them now for extra nutrition.
  • Add ice cubes to the blender. For the smoothest consistency, blend on high speed for 45-60 seconds until completely smooth and frothy.
  • Taste and adjust sweetness with additional maple syrup or tartness with more lime juice as needed. Blend for another 15 seconds to incorporate.
  • If desired, rim glasses with toasted coconut flakes by dipping the rim in water then rolling in coconut. Fill glasses with fresh ice.
  • Pour the blended mocktail into prepared glasses, leaving room for garnish. Top with fresh pineapple slices and serve immediately with reusable straws.

Notes

INGREDIENT SUBSTITUTIONS:
Coconut milk creates the creamiest texture, but coconut water works for a lighter, more refreshing version. Fresh pineapple provides the best flavor, but quality canned pineapple in juice (not syrup) is perfectly acceptable.
TROUBLESHOoting:
If texture is too thick, add more pineapple juice or coconut water gradually. If too thin, add more pineapple chunks and blend again. For extra smooth consistency, strain through fine mesh if desired.
STORAGE:
Best enjoyed immediately, but can be stored in refrigerator for up to 4 hours. Stir or re-blend briefly before serving as separation is natural. Do not freeze as texture will be compromised.
