Wash and gently pat dry the fresh mint leaves. Place 8-10 mint leaves in the bottom of your tall glass.
Add the freshly squeezed lime juice (2 tablespoons/30ml) and honey or agave nectar to the glass with the mint.
Using a muddler or the handle of a wooden spoon, gently press and twist the mint leaves with the lime juice and sweetener for 15-20 seconds. Avoid over-muddling which can make the drink bitter - you want to bruise the mint, not pulverize it.
Fill the glass halfway with crushed ice, then strain the muddled mixture through a fine-mesh strainer into a fresh glass if desired, or leave as-is for a more rustic presentation.
Slowly pour in the chilled sparkling apple cider or ginger ale, followed by the club soda. If using pomegranate or cranberry juice for color, add it now.
Gently stir with a long spoon to combine all ingredients, being careful not to flatten the bubbles.
Top with remaining ice if needed, garnish with fresh mint sprigs and a lime wheel. Serve immediately with a straw.
