Virgin Mojito

Equipment

  • Tall glass (highball or Collins)
  • Fine mesh strainer
  • Measuring spoons
  • Citrus juicer or reamer

Ingredients
  

  • 10-12 leaves Fresh mint leaves plus extra sprigs for garnish
  • 1 medium Fresh lime juiced (about 2 tablespoons/30ml)
  • 2 teaspoons Natural honey or agave nectar adjust to taste
  • 1/2 cup Sparkling apple cider or ginger ale chilled (120ml)
  • 1/4 cup Club soda or sparkling water chilled (60ml)
  • 1 tablespoon Pomegranate or cranberry juice optional, for color variation
  • 1/2 cup Crushed ice
  • 1 slice Fresh lime wheel for garnish

Instructions
 

  • Wash and gently pat dry the fresh mint leaves. Place 8-10 mint leaves in the bottom of your tall glass.
  • Add the freshly squeezed lime juice (2 tablespoons/30ml) and honey or agave nectar to the glass with the mint.
  • Using a muddler or the handle of a wooden spoon, gently press and twist the mint leaves with the lime juice and sweetener for 15-20 seconds. Avoid over-muddling which can make the drink bitter - you want to bruise the mint, not pulverize it.
  • Fill the glass halfway with crushed ice, then strain the muddled mixture through a fine-mesh strainer into a fresh glass if desired, or leave as-is for a more rustic presentation.
  • Slowly pour in the chilled sparkling apple cider or ginger ale, followed by the club soda. If using pomegranate or cranberry juice for color, add it now.
  • Gently stir with a long spoon to combine all ingredients, being careful not to flatten the bubbles.
  • Top with remaining ice if needed, garnish with fresh mint sprigs and a lime wheel. Serve immediately with a straw.

Notes

MUDDLING TECHNIQUE:
Gently press and twist the mint leaves - over-muddling releases bitter compounds from the stems. The goal is to bruise the leaves, not shred them.
FLAVOR VARIATIONS:
Replace sparkling apple cider with ginger ale for extra zing, or use lemon-lime soda for a sweeter profile. Add fresh berries or cucumber slices for additional flavor complexity.
SERVING TIPS:
Serve immediately after preparation to maintain maximum fizz. For parties, prepare the mint-lime base in batches and add the sparkling components just before serving.
STORAGE:
This mocktail is best enjoyed fresh. The muddled mint base can be prepared up to 2 hours ahead and refrigerated, but add sparkling elements just before serving to maintain carbonation.
